An analysis of the nutritive compositions in the muscle of Cranoglanis bouderius

Abstract:

Abstract: 【Objective】【Method】Nutritional components in the muscle of Cranoglanis bouderius were tested and analyzed with routine methods. Samples of 10 wild—cultured individuals were collected from Tibet selincuo lake in January of 2007.【Result】The results showed that contents of crude protein,crude fat,moisture,ash and carbohydrates of fresh muscles were 17.86%,14.27%,65.70%,2.06% and 0.11%respectively.The composition of amino acids of muscle was 18 common amino acids and 8 essential amino acids for human needs. In dry sample the total content of amino acids was68.71%; the content of essential amino acids was 26.84%.the percent age of essential amino acids in total amino acids were 39.06%, In dry sample the content of four kinds delicious amino acids was 26.66%. The composition of fatty acids of muscle was 16 fatty acids The contents of EPA and DHA in fatty acids were 1.86%and 2.85%,which were higher than some other economic fishes.【Conclusion】It was indicated that Cranoglanis bouderius is one of freshwater fishes with better nutritive value and raising value, deserving exploitation and utilization.
