摘要: 为了增加香蕉加工产品的附加值,提高资源的利用率,促进香蕉产业可持续发展,笔者归纳了香蕉加工产品现状,主要包括干燥、焙烤、饮料、罐装等香蕉加工制品,综述了干燥新技术、澄清技术、发酵技术、护色技术和稳定性工艺等香蕉加工技术及其功能成分提取的研究进展。香蕉活性成分提取、分离及应用是未来研究的主要方向,但国内对香蕉活性成分研究主要集中在多糖、多酚等方面,对儿茶酚胺方面研究罕见,如多巴胺提取技术几乎未见报道。本研究可为香蕉加工和技术研究提供参考。
