摘要: 类胡萝卜素是一类在动物体内起着重要生理作用的脂溶性有机化合物,有助于增强动物体的免疫力,其在预防癌症、心血管疾病、骨质疏松症及其他慢性疾病方面起着很重要的作用。随着科学技术的发展,在类胡萝卜素代谢机制方面的研究不断深入,尤其是在与其吸收代谢相关的蛋白质和基因变异等分子方面的研究。因此,综述与类胡萝卜素代谢相关的蛋白质及基因变异分子研究进展,为研究动物体内类胡萝卜素代谢的分子机制提供指导。

Abstract: Carotenoids are a class of fat-soluble organic compounds which play an important physiological role in animals to help to enhance the immunity of animal, playing an important role in the prevention of cancer, cardiovascular disease, osteoporosis and other chronic disease. With the development of science and technology, the study of the aspect of carotenoids metabolic mechanism has been advanced, especially the aspect of molecular, such as the proteins and gene mutations related to carotenoid absorption and metabolism. Therefore, this paper reviews the progress of molecular study on protein and gene variants of the carotenoids metabolism-related in order to provide a guide for studying molecular mechanism on carotenoids metabolism in animals.
