丝胶蛋白粉的制备及其物理性质初探

摘要: 分别采用冷冻法、酸析法、有机溶剂法和化学混凝法等方法提取丝胶蛋白并制备丝胶蛋白粉,测定并比较它们的物理特性。结果表明:冷冻法提取丝胶蛋白的回收较高;无水乙醇法结合离心法制出的丝胶蛋白粉物理性质良好,其持水性、持油性和溶解性都好于其它方法制备的丝胶蛋白粉,表现出良好的加工性能。

Abstract: Sericin is reclaimed by different methods such as freezing-centrifugation, acidification, organic solvent precipitation and chymic flocculation from cocoon-cooking water, then the sericin powders are prepared by roasting, several physical properties of sericin powder are preliminary investigated. The results show that the method of freezing-centrifugation is more effective than that of other methods, the recovery rate is high, sericin powder prepared by ethanol precipitation possesses excellent physical property, its solubility and absorbability to water and oil are higher than that of other methods, it exhibits preferable functional property.
