Studies on the Difference of Bolting and Unbolting Onions on the Physiological and Biochemical Characteristics

Abstract: With Red Creole as experimental materials, the effects of physiological and biochemical characteristics by different treatments and developmental stages were studied. The results showed that: boltings and unboltings were different in the same period. The soluble protein and free amino acid were higher in unbolting onions, the soluble sugar, C/N and POD activity were higher in bolting onions on bulbing period. Else, the soluble protein and free amino acid were higher in bolting onions, the soluble sugar, C/N and POD activity were higher in unbolting onions on bolting period. Maybe it was caused by different growth periods. SDS-PAGE indicated that protein was different with the two treatments.
