Hexokinase regulate sucrose cleavage catabolism during the development of Cabernet Sauvignon

Abstract:

Abstract: Wine grape(Vitis vinifera L.)Cabernet Sauvignon fruit were used to study the relationship of Hexokinase and key sucrose metabolism [enzymes acid invertase and sucrose synthase activity(cleavage direction)]. Using HPLC analyse the content of sucrose, glucose and fructose in berry; and the hexokinase, acid invertase and sucrose synthase enzyme activity are checked . During the development, the sucrose content was small; The gradient of Hexokinase compared with glucose, fructose was opposite; When glucose and fructose content was low, the soluble acid invertase and sucrose synthase activity began to rise; When glucose and fructose content was high, the soluble acid invertase and sucrose synthase decreased.Correlation analysis showed that sucrose content was significantly related to glucose and fructose content, glucose and fructose content was significantly negatively related with soluble acid invertase and sucrose synthase activity. hexokinase activity negatively correlated with all factors, but no significant correlation.
