A Survey of Arsenic Concentrations in Soils and Vegetables in Fuzhou and the Potential Risks to Human Health

Abstract: In order to assess the risks to human health posed by elevated concentrations of As in soils and vegetables produced, 98 soil samples and 111 vegetable samples were collected from plough layer of vegetable field on suburbs, cities and towns in Fuzhou. As concentration was measured using hydride generation atomic fluorescence spectroscopy (HG-AFS). The results showed that: As concentrations in soils ranged from 1.16 to 26.94 mg/kg, with were ithmetic means of 6.02 mg/kg. The distribution showed that As contents of soils were different in different areas, with the order as Mawei Development Region, Lianjiang County, Jinan Region, Changle City and Minhou County. As concentrations in the edible plant portions ranged from less than the analytical detection limit to 0.0575 mg/kg fresh weight, with a mean of 0.0080 mg/kg fresh weight. Consuming vegetables with elevated As concentrations might pose a health risk to local residents. Chinese chives, garden pea seedlings, ginger and garland chrysanthemum had higher As bioconcentration factors, while purple cai-tai, leaf beet, spinach, Chinese mallow, garlic, Chinese cabbage, most of the root&stem vegetables and melon&fruit vegetables had lower As bioconcentration factors.
