Discriminating the Quality of Frozen Stored Strawberries by Electronic Nose

Abstract: In this study, an electronic nose (PEN3) from Airsense Company of Germany was used for studying strawberry samples frozen stored over different time. Through the analysis of the sensor response PCA and LDA methods, we can distinguish strawberry samples of the different frozen storage time. When LDA method was used, for strawberry samples frozen stored from 10, 30, 90 days, the changing of aromatic rate was not signifi?cant. Between 90 days to 150 days, the changing of aromatic rate was significant, which correlated with the ex?tension of frozen storage time and the decrease of fruit aroma ingredients, resulting in a sharp decline in the quality. In addition, using Loadings analysis methods proved that sensors W1W, W6S and W2S were the most effective ones in distinguishing the contribution rate of strawberry samples under different frozen storage time, followed by the sensors W5S and W2W. The above experiments indicated that the strawberry fruit volatiles could be used as a useful symbol of different freezen storage time.
