Progress of Application and Distribution of Betalains

Abstract: In order to obtain utilization value of betalains effectively, scientists have made progress in extracting betalains from a variety of plants. In this paper, we reviewed the role of betalains in food security, medical and other fields concerning its characteristics such as stability, antioxidative ability, antitumous effect, haemolysis, reducing blood lipid, enzymatic activity, diabetes treatment and etc. And it was founded that the betalains was rich in red beets and existed only in 10 families of plants of Caryophyllale. We summarized researches on variety and distribution of batalains, and analyzed the present status and advances of betalains research. It was concluded that extraction and purification of betalains and quality of betalains products should be improved. It was believed that stability and antioxidative ability of betalains ought to be researched extensively, and more plants with similar components should be studied. In this way, betalains might be fully explored and utilized. Also the betalains research in medical and molecular biology should be expanded to increase the utilization and international market share of betalains.
