Effect of nitric oxide on postharvest physiology and quality of Agaricus bisporus

Abstract:

Using sodium nitroprusside (SNP) as a nitric oxide (NO) donor, the effects of different concentrations of nitric oxide treatment on physiological index of post-harvest Agaricus bisporus ‘F56’ ,at room temperature (25 ± 1 ℃) and low temperature (4 ± 1 ℃), including weight loss, line rate,total soluble solid shape structures, vitamin C(Vc), free amino acid content ,and activities of relevant enzymes from Agaricus visporus, including catalase (CAT), peroxidase (POD) and polyphenol oxidase (PPO) , were investigated. The result showed NO resulting from 0.09mmol/L SNP aqueous solution obviously inhibited weight loss, line rate, the increase of soluble solid shape structures, free amino acid content and delayed the decrease of vitamin C. The activities of CAT and POD obviously increased, and the activity of PPO decreased during storage for Agaricus visporus treated with 0.09 mmol/LSNP.Consequently, 0.09 mmol/L SNP treatment can significantly increase the activities of CAT and POD, inhibit the activity of PPO of Agaricus bisporus ‘F56’at room temperature and low temperature,and slow the decline in sporophore quality.
