Carrying out the study of Lycopene in watermelon is of great significance to human health and disease prevention. This Article summaries physicochemical property, physiological function, extraction methods, testing methods and biosynthesis of Lycopene in watermelon. This paper analyzes the distribution situation in nature, factors affecting lycopene content in watermelon. The application prospect of Lycopene in watermelon are dicussed.
