Correlation Analysis of Slaughter Performance and Meat Quality of Rare Frizzle Chicken

Abstract: The experiment was conducted to investigate the correlation of slaughter performance and meat quality in 14-week-old rare Princess chicken. It measured body size and slaughter performance, then analyzed their correlation. The results were showed that the weight of male and female birds in 14- week- old were 1120.67g and 845.33g, respectively. The male and the female have highly significant difference in body weight, carcass weight, half-eviscerated weight, breast muscle weight, leg muscle weight, percentage of leg muscle, abdominal fat weight, percentage of abdominal fat, intramuscular fat width and thickness of subcutaneous fat (P<0.01). There was highly significant difference between breast muscle and leg muscle of male chicken in red value(a), light value(L), pH and water binding capacity(P<0.01). The breast muscle and leg muscle of female chicken had highly significant difference in red value(a), light value(L), shearing force and water binding capacity (P<0.01). Breast shearing force and yellow value(b), intramuscular fat width and leg shearing force all had highly significant negative correlation (P<0.01), the correlation coefficients were -0.731 and -0.751. Slaughter rate and leg muscle pH value existed highly significant positive correlation (P<0.01), the correlation coefficient was 0.780. It is concluded that male Princess chicken is better than female in slaughter performance. Princess chicken slaughter performance has different degrees of correlation with meat quality of breast index and meat quality of leg index, and the correlation coefficient respectively were -0.731 to 0.617 and -0.751 to 0.780.
