Abstract:

The aim of this paper was to study the optimal extracting condition of polyphenols from grapevine cane pruned in winter. And the different extracting factors such as extracting temperature, ratio of solid to liquid and alcohol concentration were investigated by the single factor experiment and response surface analysis. The optimum extracting process of polyphenols from the grapevine cane was listed as follows: extracting temperature 70℃, ratio of solid to liquid 1:16.5，alcohol concentration 50%. The yield of polyphenols was found to be 14.126 mg/g.Key words: grapevine cane, polyphenosl, response surface methodology
