Gas Chromatography-mass Spectrometry Investigation the Aroma Compositions of Old Plant Tea

Abstract:

Old plant tea has a unique aroma and quality distinctive from other tea types.In order to better understand and develop it, and to solve the problem that old plant tea trees’ information on the market is confusing. In this paper, the aroma compounds of nine representative old plant tea samples were extracted using simultaneous distillation and extraction method (SDE) and determined by capillary gas chromatography-mass spectrometry (GC-MS). In a total, 63 aroma compounds were identified, including 20 kinds of hydrocarbons, 15 kinds of alcohols, 14 kinds of aldehydes, 9 species of ketenes, 8 kinds of orginac acids, 4 kinds of esters. The major aroma compounds are benzyl linalool as well as it’s oxidation products, α-terpineol, geraniol, methyl salicylate, furfur alcohol, β-ionone, benzaldehyde, benzeneacetaldehyde and (E,E)-2,4-Heptadienal. This paper revealed the aromatic compositions and features of old plant tea, and provided a scientific basis for the development and consumption of old plant tea.
