Research Progress of Bacterial β-mannanase

Abstract: Mannanase is a kind of endo-hydrolase, which can randomly hydrolyze β-1,4- glycosidic linkages. Mannanase is widely found in animals, plants and microbes. By contrast, the bacterial mannanase from microbes has a smaller molecular weight, a lower cost, shorter fermentation period, easier to extract than it from others, and also has a broader tolerance range on optimal reaction temperature and pH, which is widely used in many fields such as feed, food, oil extracting, paper-making and so on. Therefore, this paper reviews the source, characteristics, molecular biology of mannanase and its application in feed, which would offer a foundation for further exploration and utilization of bacterial mannanase.
