Effect of Storing time on Aroma Components of Chaenomeles Sinensis

Abstract: Determination on aroma compounds from Chaenomeles Sinensis with headspace solid-phase micro- extraction (HS-SPME) and GC/MS showed 64 aroma compounds consist of aldehydes, alcohols, ketones, furans, alkenes, acids and esters. The aroma components with higher relative contents include 2-Hexenal; Cyclopentanol, 2-methyl-, trans-; 4-(2,6,6-Trimethyl-cyclohex-1-enyl)-butan-2-ol; Hexanal;2,4-Hexadienal, (E,E)-; 3-Hexen-1-ol, (E)-; etc. The total aroma contents from Chaenomeles Sinensis stored one month is higher and the C6 compounds are the main compounds of Chaenomeles Sinensis.
