Studies on the difference of protein subunit’s structure in the different varieties of rice

Abstract: Abstract:The difference of protein PB-II subunit and gliadin PB - I subunit’s content in the rice through SDS-PAGE electrophoresis detection method was discussed. The results showed that different varieties of rice have the different protein subunits amount, for example existed prolamine amount 11.53% only in Longjing 8 and content prolamine amount 13.39% and 13.61% in 99-135 light and the Fujitsu-Zein subunit, ranking the same level, but it’s rich glutetnin amount in protein-protein PB-II for 72.87% and 69.52 %,; Sui Japonica No. 3 prolamine amount content of 15.25% prolamine amount subunit relatively high. According to a single13kDa subunit analysis of the rice’s species, the 13kDa prolamine amount subunit’s content was higher than that of several other varieties obviously in the 3rd Sui Japonica and Indica and Japonica intercourse Teyou 21. In other words, the content of 13kDa prolamine amount subunit is different in the different species.
