Abstract: The effect of different Nitrogen Levels on rice yield and quality of Longdao5 and Dongnong428 through single factors experimental design. The result showed that the differences were significant by different Nitrogen Levels effect on rice panicle per square meters, grains per spike, air shriveled grain, 1000-grain weight and yield. The panicle per square meters of Longdao5 was increased with the increases of nitrogen. During the nitrogen level 0-135kg/hm2, the number of grains per spike, 1000-grain weight and yield was increased with the amount of nitrogen increases, while nitrogen level in 175kg/hm2 the number of grains per spike was declined and air shriveled grain was high, Dongnong 428 had the same trend. Protein content and amylose content of rice was increased with the amount of nitrogen increases. The amylose content of Dongnong 428 was decreased for 175kg/hm2 .The brown rice rate, milled rice rate and head milled rice rate of Longdao5 and Dongnong428 were the biggest in nitrogen level 135kg/hm2. The chalkiness degree and chalkiness rate of Longdao5 was significant between each treatment, The gel consistency difference of Dongnong428 was significant, the gel consistency was decreased with the nitrogen level increased.
