HPLC-MS/MS Analysis of Polyphenols in Different Fermented Type Tea Products Prepared from Camellia sinensis‘Baiye Dancong’

Abstract:

Chemical compositions of broken black tea, oolong tea and dark tea prepared from Camellia sinensis ‘Baiye Dancong’ were analyzed by HPLC-MS/MS method. Comparing the UV absorption spectra and mass spectra of the peaks in the obtained HPLC chromatograms with those of the authentic standards and related literatures, 32, 30 and 14 compounds were identified from broken black tea, oolong tea and dark tea respectively. These compounds included catechins, alkaloids. Some non-catechin polyphenol compounds such as flavonol glycosides with kaempferol, quercetin and myricitin as aglycones, and catechin polymers such as theasinensins were also identified.
