The Study on the Ideal Reference Protein Model of Chemical Analysis and Biological Value

Abstract:

Different chemical score can be obtained under different reference protein model when biological analysis is used. So, it is not perfect and satisfied enough to use it as the estimated value of biological value (BV). Therefore, it is more meaningful to find out an ideal reference protein model to gain more exact and reliable chemical score. The paper aims at analyzing the relativity and deviation of each chemical score and BV in two models (Whole Egg model and FAO/WHO model), and finding out the regression equation between each chemical score and BV. Consequently, it is found that the deviations between the two above are quite different. And it is important that the CBV can eliminate the deviation over all. The relativity between AAS, CS, EAAI, EAARR and BV under the Whole Egg model is much greater, while the relativity between SRCAA and BV is much greater under the FAO/WHO model. Meanwhile, the CBV doesn’t only make the relativity maintain the same but also make the two parts (Chemical Analysis and Biological Value) equal to each other. Therefore, the Whole Egg model could be used to analyze AAS、CS、EAAI and EAARR and the FAO/WHO model could be used to analyze SRCAA. The CBV is much closer to BV than each chemical score. And it is more reasonable, exact and trustworthy to use the CBV as the estimated value of BV.
