具有保健功能农产品定价策略分析——以蜂蜜为例

Pricing Strategy of Agricultural Products with Health Care Effect——Taking Honey as an Example

摘要: 为掌握蜂蜜市场的价格特征,探讨具有保健功能农产品的定价策略,蜂产业体系课题组2012—2014年对北京、杭州、青岛、郑州、成都市蜂蜜市场开展了调查。基于调查数据文章分析了蜂蜜市场的价格特征及其原因,对不同销售地点同质蜂产品价格进行对比;并结合蜂产业体系经济岗课题组在全国11个省开展的蜂产品生产固定观察点数据分析蜂蜜生产成本构成,探讨蜂蜜价格持续上涨的原因;最后以蜂蜜为例,对保健功能农产品的定价策略进行分析。结果表明:各类蜜种蜂蜜产品价格都略有上升,但巢蜜、中蜂蜂蜜、椴树蜜等产量少、蜜源稀缺的品种上升幅度大;各城市在售同种蜂蜜、国产与进口蜂蜜价差拉大。要解决高质量原料收购价格低,市场上产品质量良莠不齐的问题,关键在于形成从原料蜜收购到终端市场的优质优价机制,产品信息透明,提高顾客对蜂蜜保健功能的认知度。

Abstract: To get information of honey price and discuss the pricing strategy of agricultural products with health care effect, the team of Research of National Bee Industry and Technology System carried out investigation on honey price in Beijing, Hangzhou, Qingdao, Zhengzhou and Chengdu from 2012 to 2014. Based on the investigated data, the paper analyzed the characteristics of honey market and its influencing factors. The paper also made a comparison of the same quality honey products sold in difference cities. Then the author discussed the reasons for continuous rise of honey price considering the cost structure collected by fixed observation points located in 11 provinces all over the country. At last, the paper took honey as an example to analyze the pricing strategy of agricultural products which had health care effect. The results showed that prices of all kinds of honeys increased, especially those with low yield and scarce nectar source, such as nest honey, honey produced by local bee varieties in China and bass honey, etc. And price differences of the same kind of honey were gradually widening among different cities, and also between local produced and imported honey. Low procurement price of high quality raw material and the uneven quality of products were problems of the current honey market. The author held the opinion that the keys to solve these problems were to build up quality and price mechanism in the whole process which was from raw material purchase to the terminal market, publicize more products information and improve customers’ awareness of health care effect of honey.
