遮阳对茶树鲜叶主要氮素化合物的影响

Effects of Shading on Main Nitrogen Compounds in Fresh Leaves of Tea Plant

摘要: 探究遮阳对茶树鲜叶主要氮素化合物的影响,为改善茶树鲜叶品质提供理论依据。使用6 种不同遮光率的遮阳网对茶树进行不同时间遮阳处理,以不遮阳为对照,分别在遮阳12、21、65 天后检测鲜叶化学成分。除42%遮光率处理65 天后鲜叶咖啡碱含量与对照无显著差异外,其他遮光率处理不同时间后均提高了鲜叶咖啡碱含量,其中89%遮光率在遮阳12、21 天后咖啡碱含量分别比对照高16.95%、54.41%;53%和51%遮光率处理12 天后鲜叶可溶性蛋白含量分别比对照高13.91%、17.88%;除33%遮光率外,游离氨基酸总量经各遮光率处理12 天后均有所增加,其中70%遮光率处理比对照高22.31%。在春茶早期,对茶树进行50%~70%遮光率的遮阳处理,可增加茶树鲜叶主要氮素化合物的含量。

Abstract: Aiming at improving the quality of fresh tea leaves, effects of shading on the main nitrogen compounds of fresh tea leaves, including caffeine, soluble protein and free amino acids, were investigated. The tea plants were treated with varied levels of shading (0%, 33%, 42%, 51%, 53%, 70% and 89%) and varied time (12, 21 and 65 days), then the contents of main nitrogen compounds in fresh leaves were measured. Compared with the control group (i.e., 0% shading), no significant difference was observed in caffeine content in fresh leaves that treated with 65 days and 42% shading, but the caffeine content increased in other treatments. For example, the caffeine content in fresh tea leaves with treatment of 89% shading was 16.95% and 54.41% higher than that in control groups at 12 and 21 days, respectively. Besides, when the fresh tea leaves were treated with 53% or 51% shading for 12 days, the content of soluble protein was 13.91% and 17.88% higher than that in control group, respectively. Except 33% shading treating group, the total amounts of free amino acids increased after 12 days, and that of the group with 70% shading increased by 22.31% compared with the control. Therefore, in early spring time, fresh tea leaves treated with 50%-70% shading could increase the contents of main nitrogen compounds.
