强酸性电解水的杀菌机理与应用

摘要: 电解水是一种新型机能水,为稀食盐水在电场作用下电解出的水溶液,根据电解方式及程度不同分为酸性电解水与碱性电解水。强酸性电解水具有低pH(2~3)、高氧化还原电位(900~1200mV)及一定的有效氯含量(10~160mg/L),表现出较强的杀菌能力,而且与传统的杀菌剂相比具有广谱高效、操作简单、安全无害、环境友好等优点,近年来已被作为一种新型杀菌剂广泛应用于医疗、农业、食品加工等行业的杀菌消毒。笔者介绍了强酸性电解水的特性、生产原理、杀菌机理与杀菌效果,阐述了影响强酸性电解水杀菌效果的因素及其在农业中的应用,并展望了强酸性电解水的应用前景。

Abstract: Electrolyzed water is a new kind of functional water, generated through electrolysis of dilute salt solution in an electric field. It is characterized in two types by the electrolysis method and extent, acidic electrolyzed water and alkaline electrolyzed water. Strong acidic electrolyzed water (AEW) was reported to exhibit strong antibacterial activity against many pathogens mainly as a result of its low pH (2~3), high oxidation-reduction potential (900~1200mV), and available chlorine content. Moreover, AEW exhibits the following advantages over other traditional cleaning agents: high effectiveness, easy operation, safety and environmentally friendly. In recent years, AEW has been regarded as a novel and effective sanitizer and used widely in medicine, agriculture, and food industry. In this paper, the characteristics, manufacturing and sterilization mechanism of strong acidic electrolyzed water were introduced, the application and factors affecting the sterilization ability were clarified, and the prospect was forecasted.
