Abstract: The fresh weights and soluble solids, protein and amino acid and lycopene, vitamin C contents of eggplant fruits at different developmental stages were measured. The results showed that the soluble solid, protein, amino acid, vitamin C contents appeared to increase at the beginning and decline later on, and the lycopene content appeared to decrease initially and then rise. The nutrient contents of the fruits on the main stem and the fruits on the first pair of the shoots were compared, which indicated the nutrient contents of the fruits on the main stem were higher that those on the first pair of shoots.
