Sterilization mechanism and application of strong acidic electrolyzed water

Abstract: Electrolyzed water is a new kind of functional water, generated through electrolysis of dilute salt solution in an electric field. It is characterized in two types by the electrolysis method and extent, acidic electrolyzed water and alkaline electrolyzed water. Strong acidic electrolyzed water (AEW) was reported to exhibit strong antibacterial activity against many pathogens mainly as a result of its low pH (2~3), high oxidation-reduction potential (900~1200mV), and available chlorine content. Moreover, AEW exhibits the following advantages over other traditional cleaning agents: high effectiveness, easy operation, safety and environmentally friendly. In recent years, AEW has been regarded as a novel and effective sanitizer and used widely in medicine, agriculture, and food industry. In this paper, the characteristics, manufacturing and sterilization mechanism of strong acidic electrolyzed water were introduced, the application and factors affecting the sterilization ability were clarified, and the prospect was forecasted.
