Abstract:
In order to improve the quality for stored Agrocybe chaxingu, modified atmosphere packages with or without silicon gum film windows were used for storing Agrocybe chaxingu and the changes of contents of total sugar, protopectin, WSP (water solution pectin), protein and total amino acid, amino acid and cellulos were studied. The results showed that, compare to the packages without silicon gum film as windows, the contents of total sugar, protopectin, protein and total amino acid in the Agrocybe chaxingu stored in packages with silicon gum film as windows decreased slowly, and the contents of cellulos, WSP (water solution pectin) and amino acid in the Agrocybe chaxingu stored in packages with silicon gum film had a little increase. The packages with silicon gum film as windows were better for storing Agrocybe chaxingu, and the Agrocybe chaxingu kept more total sugar and protein, better taste, and had better quality.
