Nutritional Quality of Different Lactuca sativa L. Varieties

Abstract: In order to evaluate the lettuce (Lactuca sativa L.) varieties which have high content of nutrients and low content of nitrate, we determined six nutritional quality parameters including Vc, organic acids, crude fiber, soluble sugar, soluble protein, and nitrate of 25 lettuce varieties in this experiment. Then we calculated the nutritional value of each nutritional quality parameter using the membership function from the fuzzy math. The results showed great differences of the nutritional quality among different lettuce varieties. Moreover, the nutritional quality also had great differences among the lettuces of the same variety but from difference resources. In our research, there were two varieties with high nutritive quality, they were ‘N-I’ and ‘Dasusheng’. And also from the results we found that some varieties were rich both in nutrition and nitrate, providing the direction for optimum breeding.
