Storage Performance of Hawthorn Fruits Based on Principal Component Analysis

Abstract:

To investigate the storage performance of different varieties of hawthorn fruits, ‘Dajinxing’, ‘Zezhouhong’ and ‘Hongwuleng’ were used as specimens to carry out texture profile analysis (TPA) and puncture test. The differences of fruit texture, texture change patterns and storage performance of different varieties of hawthorn fruits during storage were investigated. The results showed that there were some differences in texture and storage properties among different varieties of hawthorn fruits. During the storage period, ‘Dajinxing’ had the smallest values of variation in peel hardness, flesh hardness and adhesion, followed by ‘Hongwuleng’, and ‘Zezhouhong’ had the largest value of variation in each index. The overall scores of the principal component analysis showed that the storage performance of hawthorn was ‘Dajinxing’> ‘Hongwuleng’> ‘Zezhouhong’ in the order of good to bad.
