Analysis of Nutrients Component of 15 Vegetables in Hebei

Abstract: 【OBJECTIVE】The nutrition ingredients of 15 vegetables were studied, such as potato, kidney bean, carrot and tomato et al 【METHOD】in order to help people to develop a healthy diet plan. The content of the protein , vitamin C and the mineral element of 15 vegetables were tested indoor 【RESULTS】the content of protein of anise was the highest among the 15 vegetables, 7.77g/100g·FW g. The content of vitamin C is the highest in balsam pear 106.52 mg/100g·FW .The content of calcium of rape is the highest 6 .72g/100g·DW. The content of magnesium of carrot is the highest 56.09mg/100g·DW. The content of copper is the highest in cucumber 1.84mg/100g·DW. The content of zinc of lettuce is the highest 8.86mg/100g·DW.【CONCLUSION】In short, the content of protein, magnesium, copper and zinc were not to meet the people daily requirment. But in rape, cucumber and celery ,the content of calcium was high which could meet the people daily requirment.
