不同类型冠突散囊菌对茯砖散茶主要化学成分的影响

The influence of different types of Eurotium cristatum on brick loose tea’s main chemical composition

摘要: 摘要:选用4个不同类型的冠突散囊菌(冠突散囊菌标准冠突散囊菌(G1)、褶皱冠突散囊菌(G2)、异冠冠突散囊菌(G3)、鹅黄冠突散囊菌(G4))为接种菌,对安化黑毛茶进行人工接种处理得到茯砖散茶,分别比较4个不同类型冠突散囊菌在接种3、7、11天后的EGCG、咖啡碱、茶氨酸、茶多酚、可溶性糖、水浸出物、氟含量等品质指标的变化情况,以期寻找能够生产出品质良好且益于健康的优势菌种。结果表明,在分别接种3天、7天和11天后,褶皱冠突散囊菌(G2)接种处理后的茯砖散茶各指标较其它处理表现出一定的优势。其中, EGCG、茶氨酸、茶多酚含量均高于其它3个处理,且EGCG含量G2与G3、G4存在显著性差异;咖啡碱含量最低;可溶性糖含量略低于其它3个处理。综合来看,褶皱冠突散囊菌(G2)接种后的茯砖散茶表现为最佳,适合推广。

Abstract: Abstract: Choose four different types of Eurotium cristatum(standard Eurotium cristatum(G1),Eurotium cristatum drape(G2),Eurotium cristatum variecolor(G3), Eurotium cristatum light yellow(G4)) as inoculant, vaccination to anhua dark tea we get their brick loose tea. Through the comparison of four different types of Eurotium cristatum in the inoculation to anhua dark tea 3, 7, 11 days later in EGCG,caffeine, theanine, tea polyphenols, soluble sugar, water extract and fluorine,to find the best type of Eurotium cristatum. The results show that,after vaccination to anhua dark tea 3, 7, 11 days later, the treatment of Eurotium cristatum drape’s(G2)brick loose tea is better than others. Among them, the EGCG, theanine, tea polyphenol content are higher than the other three processing, And the content of EGCG G2 and G3, G4 have significant different, caffeine content is minimum,soluble sugar content is slightly lower than other three processing. Comprehensive to see, the treatment of Eurotium cristatum drape’s(G2)brick loose tea is best,and suitable for promotion.
