摘要:

文章归纳总结了红甜菜根内的活性物质成分及其生物学功能;分析了红甜菜及甜菜红素在抑菌抗疟、抗炎、抗病毒、心血管、细胞和神经保护等方面的应用进展;评述了其作为添加剂和主要营养成分,在饮料、肉制品、功能性食品等领域的生物学价值。此外,还简述了红甜菜在种植过程中的耐盐碱及净水等生物学特性,以及甜菜红素近年来在绿色环保领域的应用。可以看出,红甜菜及其相关产业极具发展潜力和价值。

Abstract:

In this paper, the active components and biological functions of red beet root were summarized, and the application progress of red beet and betacyanins in bacteriostasis, antimalarial, anti-inflammatory, anti-virus, cardiovascular protection, cell protection and neuroprotection were analyzed. As an additive and main nutritional component, the biological value of red beet in beverages, meat products and functional foods were reviewed. In addition, this paper also briefly described the biological characteristics of red beet in the process of planting, such as salt and alkali tolerance and water purification, as well as the application of betacyanins in the field of environmental protection in recent years. It can be seen that red beet and its related industries have great development potential and value.
