Effects of Different Humidity Conditions on Enzymatic Browning Reaction and Quality of Cigar Tobacco Leaves During Air-Curing

Abstract:

To understand the effect of different humidity conditions on the enzymatic browning reaction of cigar tobacco leaves and its chemical composition, providing a theoretical basis for the modulation of cigar tobacco leaves, under the conditions of three different curing humidity, the effects on the moisture content of the cigar tobacco leaf, pigment, polyphenol oxidase (PPO), polyphenols and the chemical composition after curing were studied. The results showed that, (1) moisture and plastid pigments of cigar tobacco showed a decreasing trend under different air humidity conditions. (2) Polyphenol oxidase activity increased first and then decreased. (3) Polyphenols increased slowly and then decreased. The humidity range of cigar tobacco leaves was controlled under medium humidity conditions. The moisture content of the tobacco leaves was suitable for the life activities of the tobacco leaves. The degradation rate of plastid pigment was the fastest. The enzyme activity was low, the accumulation of polyphenols was more, and the chemical composition was coordinated. This shows that regulating the humidity of the cigar tobacco leaves can effectively improve the beneficial effect of the enzymatic browning reaction on the cigar tobacco leaves and improve the inherent quality of the tobacco leaves.
