Aroma Composition Analysis of Two Wild Apple Germplasms

Abstract: In order to provide theoretical reference for the utilization of wild apple germplasms, two wild apple germplasms (Malus xiaojinensis and M. sieversii) were used as plant materials, and the aromatic components in fruit were evaluated by HS-SPME-GC-MS. Results showed that M. xiaojinensis had higher total aromatic concentration than M. sieversii; 90 and 97 aromatic components were detected in M. xiaojinensis and M. sieversii, respectively, and 88 were common and 2-Hexenal had the highest level in both germplasms; Aldehydes and esters were the dominant aromas in M. xiaojinensis, and aldehydes, esters as well as alcohols in M. sieversii. Different levels of common aromatic components to the two apple germpalsms, and the unique aromatic components for one of them may result in the characteristic aroma of the apple germplasm.
