The Analysis on Nutritional Qualities of Peanut Cultivars Which Host Planted in Fujian Province

Abstract: The components of 9 peanut cultivars were analyzed and appraised which host planted in Fujian Province. The results showed that average contents of fat and protein in 9 peanut cultivars were 49.71% and 29.95% relatively. The amounts of calcium, phosphorus, zinc and potassium were 616.07mg/kg dry weight, 5799.06mg/kg, 50.16mg/kg, and 6452.85mg/kg. The essential amino acids average content accounts for the amino acid total quantity 30.79%. The cultivar producing the highest essential amino acids of 8.79% was called “Shanyou71”, the lowest essential amino acids of 7.68% was called “Baisha1016”. The average content of unsaturated fatty acid was 83.43%. Especially that of linoleic acid reached 36.28%, the ratio of oleic acid and linoleic acid was 1.28, and the highest ratio of 1.42 was determined in “Minhua6”, which was suitable for storing.
