Effect of CA Storage on Post-harvest Physiology and Accumulation
of Hazardous Substances of Dongzao Jujube Fruit

Abstract: In order to provide basic theory for the optimal CA storage conditions and methods for Dongzao jujube, the post-harvest physiology characteristics were probed. With test material of Dongzao jujube from north Shandong province, effect of different CA indexes on accumulation of hazardous substances such as ethanol and acetaldehyde in fruits of Dongzao jujube was studied. The results showed that appropriate low level of O2 was able to restrict lowering of pulp hardness, maintain completeness of cell membrane and lessen loss of Vc, simultaneously, it did not cause large accumulation of ethanol and acetaldehyde in pulp, suspending consenescence of fruits. CO2 in storing condition was able to accelerate anaerobic respiration of fruits, expedite accumulation of ethanol and acetaldehyde in fruits, strengthen harm to pulp, damage completeness of cell membrane aggravate loss of Vc and speed up course of softening and consenescence of fruits. The research showed that the CA index of 2%O2+0%CO2 was the most beneficial to storage of Dongzao Jujube.
