不同湿度条件对雪茄烟叶晾制过程中酶促棕色化反应及品质的影响

摘要:

为了解不同湿度条件晾制过程对雪茄烟叶酶促棕色化反应及其化学成分的影响,以期为雪茄烟叶调制提供理论支撑和实践指导,设置高湿、中湿、低湿3种湿度条件,研究其对雪茄烟叶含水率、色素、多酚氧化酶(PPO)、多酚类物质和晾制后化学成分的影响。结果表明:(1)不同晾制湿度条件下雪茄烟叶水分和质体色素呈逐渐减小的趋势;(2)多酚氧化酶活性呈先升高后降低变化趋势;(3)多酚类物质先缓慢增加后下降。雪茄烟叶晾制过程中湿度范围控制在中湿条件下,烟叶含水率适宜烟叶生命活动的进行,质体色素降解速率最快,在变黄变褐期多酚氧化酶活性低,多酚类物质积累较多,化学成分协调。说明调控晾制湿度可以有效促进雪茄烟叶酶促棕色化反应,提高烟叶内在品质。

Abstract:

To understand the effect of different humidity conditions on the enzymatic browning reaction of cigar tobacco leaves and its chemical composition, providing a theoretical basis for the modulation of cigar tobacco leaves, under the conditions of three different curing humidity, the effects on the moisture content of the cigar tobacco leaf, pigment, polyphenol oxidase (PPO), polyphenols and the chemical composition after curing were studied. The results showed that, (1) moisture and plastid pigments of cigar tobacco showed a decreasing trend under different air humidity conditions. (2) Polyphenol oxidase activity increased first and then decreased. (3) Polyphenols increased slowly and then decreased. The humidity range of cigar tobacco leaves was controlled under medium humidity conditions. The moisture content of the tobacco leaves was suitable for the life activities of the tobacco leaves. The degradation rate of plastid pigment was the fastest. The enzyme activity was low, the accumulation of polyphenols was more, and the chemical composition was coordinated. This shows that regulating the humidity of the cigar tobacco leaves can effectively improve the beneficial effect of the enzymatic browning reaction on the cigar tobacco leaves and improve the inherent quality of the tobacco leaves.
