摘要: 稻米品质的形成除受品种自身的遗传基因控制外,还受到各种环境因素的影响。从地域、海拔、气候、土壤、水分等方面综述了环境因子对稻米加工品质、外观品质、蒸煮食味品质和营养品质的影响研究进展,并指出了今后在该领域需要深入探讨的几个问题。

Abstract: Rice quality was influenced not only by its genetic genes, but also by environmental factors. This paper reviewed already-done studies on the effects of environmental factors such as clime, altitude, climate, soil and water on rice quality including processing quality, appearance quality, cooking and eating quality, nutrition quality. Some further studies were pointed out and should be strengthened in the future.
