摘要：

开展西瓜果实中番茄红素的研究，对人体保健和疾病的预防有着重要的意义。文章综述了西瓜果实中番茄红素的理化性质、生理功能、提取方法和测定方法和生物合成，分析了番茄红素在自然界中的分布情况和影响西瓜果实中番茄红素含量的因素，讨论了西瓜中番茄红素的应用前景。

Abstract:

Carrying out the study of Lycopene in watermelon is of great significance to human health and disease prevention. This Article summaries physicochemical property, physiological function, extraction methods, testing methods and biosynthesis of Lycopene in watermelon. This paper analyzes the distribution situation in nature, factors affecting lycopene content in watermelon. The application prospect of Lycopene in watermelon are dicussed.
