Research Progress on Regulation of Anthocyanins in Fruit Trees by Environmental Factors and Endogenous Substances

Abstract:

The synthetic pathway of anthocyanins has been roughly determined, but there is still a lack of comprehensive and systematic elaboration of the effects of environmental factors and endogenous substances on the accumulation of anthocyanins. According to the domestic and foreign research progress, by summarizing the effects of light, temperature, mineral elements and other environmental factors, as well as endogenous hormones and other substances on the accumulation of anthocyanins in fruit trees, it was found that strong light, low temperature, some mineral elements, moderate drought, acidic environment, sugars and ethylene had a protective effect on the stability of anthocyanins, and could promote the synthesis of anthocyanins. Such research can provide a theoretical basis for the further improvement of fruit color and nutritional quality of fruit trees, provide a reference direction for the breeding, research and development of fruit varieties, and also provide theoretical guidance for the extraction, processing, transportation and storage of anthocyanins in fruit trees, so as to promote the full accumulation and comprehensive utilization of fine and natural phytochemicals in fruit trees. However, the specific mechanisms of environmental factors and endogenous hormones in the anthocyanin regulatory network still need to be further studied with the help of molecular biology, epigenetics and other biotechnology in the future.
