Fruiting Body of Agaricus sinodeliciosus: Nutritional Quality Analysis

Abstract: The paper aims to study the nutritional contents of Agaricus sinodeliciosus. The nutritional quality of domesticated Agaricus sinodeliciosus is determined by the National Standard Law on Food Safety. The results show that: the crude protein of Agaricus sinodeliciosus is 33.75 g/100 g, there are 18 types of amino acids in it and the content of 8 essential amino acids accounts for 40.5% of the total, the ratio of essential and unessential amino acids (E/N) is 68.1; the amino acid score, chemical score and essential amino acid index is 8.06, 5.56, 75.8, respectively; the content of umami amino acids is 5.4312 g/100 g; in addition, there are also rich mineral elements, and the contents of selenium, zinc, boron and sodium are significantly higher than those in the control group. Agaricus sinodeliciosus is a kind of rare edible fungus with rich protein content, low fat content, delicious taste and high nutritional value, and is suitable for the general population, and it has a good prospect of development and utilization.
